Another soup experiment. I just love green, creamy soups without using the actual cream. Avocado is creamy and silky, rucola is spicy, peas are sweet. Blend these together and you'll get a very special something.
Rucola, avocado&pea soup
You'll need:
100 g rucola
1 avocado
50 g peas (frozen or fresh)
0,7 l organic vegetable stock
salt
lime/lemon juice
chilli (optional)
Method:
1. Prepare the vegetable stock and cook the peas. I cooked the frozen peas in the stock until boiled. Let cool slightly.
2. Peel the avocado and remove the pitch.
3. Place in a blender together with rucola, peas and stock. Blend until smooth.
4. Season with salt, lime juice and chilli and blend one more time.
5. Ready to serve.

Jooj,Evinka..dobre si si to vymyslela..zimu si zazehnala hrejivymi cookies,a leto si privolala zelenou exploziu zdravia...polievocka vyzera uzasne zdravo,a chutne..sama moja oblubena zeleninka,takze hned ako maminke konecne zarodi v zahradke hrasok,pustim sa do toho..uz sa neviem dockat:)
ReplyDelete:) Tak som tusila, ze by ti polievocka mohla padnut do ocka :) Ak si dobre spominam, ty si uz minimalne jednu rukolovu polievku vyskusala, vsak? Ja som akurat potrebovala spracovat viac rukoly naraz, Andreas jej kupil trochu dost :) tak som si povedala, ze preco nie do polievky. A mas pravdu, je to taky zdravy a energicky boost, padla mi akurat. Vyborna bola aj vlazna, cize naozaj ako stvorena na leto..juj a domaci hrasok, to je priam luxus!

ReplyDeletedakujem Lucka aj Miska..veru, tu zelenu farbicku som jednoducho potrebovala, uz 3 dni mame skaredo a hrozne sivo vonku..padla naozaj dobre :)
